Ingredients

  • 300 ml water
  • 2 tsp loose black tea (Assam), or 2 tea bags
  • 300 ml semi-skimmed milk (or oat drink)
  • 1 cinnamon stick
  • 4 pods green cardamom
  • 2 cm fresh ginger
  • 1 star anise
  • 3 cloves
  • 4 black peppercorns
  • 2 tbsp cane sugar (or honey)
  • 1 pinch ground cinnamon (to serve)

Préparation

  1. Crush the cardamom pods with the flat of a knife to open them, roughly crush the peppercorns and cut the ginger into thin slices.
  2. In a saucepan, bring the water to the boil with the cinnamon stick, cardamom, ginger, star anise, cloves and pepper. Simmer for 4 minutes to let the spices infuse.
  3. Add the tea and sugar and simmer for another 2 minutes.
  4. Pour in the milk, keeping 50 ml aside for the foam, and heat until it just starts to simmer, without letting it boil.
  5. Meanwhile, heat the reserved milk and froth it: shake it for 30 seconds in a tightly closed jar, or whisk it vigorously.
  6. Strain the chai into two large mugs, spoon the milk foam on top and sprinkle with a pinch of cinnamon.

Notes

Don't let the tea brew for more than 2 to 3 minutes or it will turn bitter. For a stronger chai, add an extra spoonful of tea rather than brewing it for longer. The strained spices can be used a second time.
