Ingredients

  • 1 courgette (about 200 g)
  • 2 carrots (about 200 g)
  • 1/2 onion
  • 100 g oats (fine or porridge oats)
  • 2 eggs
  • 50 g grated cheese (Emmental, Comté or Gruyère)
  • 1/2 tsp ground cumin
  • 1/2 tsp ground turmeric
  • salt and black pepper
  • 3 tbsp olive oil for frying

Préparation

  1. Grate the courgette, salt it lightly and leave it in a colander for 10 minutes. Squeeze it hard in a tea towel to remove the water.
  2. Peel and grate the carrots. Finely chop the onion.
  3. In a large bowl, mix the vegetables, oats, eggs, cheese, spices, salt and pepper.
  4. Leave to rest for 10 minutes so the oats can swell.
  5. Heat the oil in a frying pan over a medium heat. Drop in spoonfuls of the mixture and flatten them into patties 1 cm thick.
  6. Cook for 3 to 4 minutes on each side, until nicely golden. Drain on kitchen paper and serve.

Notes

To bake them instead: 20 to 25 minutes at 200°C (180°C fan), turning halfway through. They keep for 3 days in the fridge and freeze well.
