Erwtensoep (Dutch split pea soup)

Snert, the Dutch winter soup: green split peas simmered with pork ribs, smoked bacon, celery root, leek and carrots, then topped with slices of smoked sausage. A meal in a bowl, so thick the spoon stands up.

Ingredients

  • 500 g green split peas rinsed
  • 2 l water
  • 500 g pork spare ribs (or a smoked ham hock)
  • 150 g smoked bacon in one piece
  • 2 bay leaves
  • 1 onion chopped
  • 2 carrots finely diced
  • 300 g celery root (celeriac) finely diced
  • 2 leeks sliced
  • 1 potato diced (optional)
  • 1 smoked sausage (rookworst) about 275 g
  • 1 small bunch leafy celery chopped
  • salt, black pepper

Préparation

  1. Put the rinsed split peas, water, spare ribs, bacon and bay leaves in a large pot. Bring to a boil and skim.
  2. Simmer covered over low heat for 1 hour, stirring now and then so the peas don't stick.
  3. Remove the meat and bacon. Take the meat off the bones and cut it into small pieces along with the bacon.
  4. Add the onion, carrots, celery root, leeks and potato. Simmer another 40 minutes, stirring often, until the peas have completely broken down.
  5. Add the whole smoked sausage to the soup for the last 20 minutes, then slice it.
  6. Return the meat, bacon and sausage to the pot with the leafy celery. Season with salt and pepper and remove the bay leaves. The soup should be very thick.
  7. Serve piping hot with rye bread and smoked bacon, or chill overnight and reheat the next day.

Notes

Like all split pea soups, snert thickens as it cools and tastes even better the next day. To reheat, add a little water and stir often over low heat. No need to soak the split peas.
